I've had jalepeno plants for 3 years now. The first year we had two jalapenos the whole season. Last year we had 4 or 5. This year I'm picking 4 or 5 a day. It's crazy. I can't give them away fast enough.
I make a relish with them for on steak and The Husband likes that. My partner on the squad loves them - slices them up and put them on everything.
Yesterday, faced with a pound of them, I tried making jalapeno hot sauce. It was an easy recipe - boil, puree with oil and add salt and pepper. Those were easy steps. However, there should have been a warning on the instructions - don't do this inside!
First, I splashed some juice as I was de-seeding them that went right into my eye. Not that bad. And I used gloves to handle them so my hands didn't burn. But the boiling was terrible. I found myself coughing uncontrollably. My eyes were watering.
It was weird since I didn't actually smell anything. Then the boys started with the coughing. I set up fans venting the kitchen to outside and put a lid on the pot but even then it was still a problem. Once the sauce was done things improved and The Husband said it was good but numbingly hot.
I'm going to freeze it in small batches and I hope he enjoys it because I probably will not make it again. And I'd would have taken a photo but it pretty much looked like green slime.
