It is nearing the end of the growing season and at some point we will have a frost that will kill most of the plants. Keeping that in mind, I am beginning to harvest my herbs. I will probably dry a lot of them but I have some that I can use other methods.
Yesterday I made syrup from strawberry lemon balm. That has been one of my favorite herbs this year. I love to pick a leaf, clap it between my hands to open up all the oils and sniff. It's almost like lemon Pledge but sweeter.
First I picked and washed a bunch.
Then I set the leaves to boil in water with sugar.
After letting the mix cool, I strained out the leaves.
The final product is very sweet and very lemon flavored. It was fantastic added to green tea and will keep for a month in the fridge.
Nice! Never heard of that herb before.

I was introduced to it at a local historical home that keeps an herb garden - lemon balm. The herb farm I go to has a bunch of different varieties and the strawberry tasted a little sweeter. I love to smell it (a little like sniffing Pledge).
