Quite a while ago, I purchased powdered funnel cake mix from a co-worker of The Husband's. Forgotten on a shelf in the basement, I noticed it today and brought it upstairs.
It was fairly easy to make but the powder to water ratio was a little off so my first attempt came out in pieces and was doughy. After adding some water, the second one came out perfectly.
I even managed to overcome my fear of frying things in an inch of oil.
The mix was actually pretty good and what was better was being able to control the size of the cake. Usually I'm sick of it before I get half-way through, so the ones I made were very small.
I have enough prepared batter to make another batch tomorrow afternoon and enough powdered mix for several more rounds of yum.
